George Watts III

It started in 2017 with a food truck, a pit, and a stubborn belief that the Valley deserved barbecue as good as anything in Lockhart or Austin. By 2021 the line got long enough to put a roof over it — GW's opened on Nebraska Avenue in San Juan, and the brisket did the talking.

In 2026, George Watts III was named a James Beard Award semifinalist for Best Chef: Texas — the only one in the entire Rio Grande Valley. Same pits, same post oak, same pitmaster still cutting brisket on the line.

Do you take reservations?

No — GW's BBQ is walk-in only. We smoke fresh every morning and serve until we sell out, so come early. Doors open at 11 AM, Wednesday through Sunday.

What are your hours?

We're open Wednesday through Sunday, 11 AM to 4 PM — or until we sell out, whichever comes first. Closed Monday and Tuesday.

Do you cater events?

Yes. We cater weddings, quinceañeras, corporate events, and parties across the Rio Grande Valley. Tell us the date and headcount on our catering page and we'll build the spread.

Do you sell out?

Often. We smoke a set amount of brisket, ribs, and sausage fresh each day and serve it until it's gone — usually by mid-afternoon. Come early for the full menu.
